- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large pot, bring salted water to a boil. Add the cauliflower florets and diced potatoes. Cook until tender, about 10-15 minutes. Drain and set aside.
- Step 3: In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Step 4: In a mixing bowl, combine the cooked cauliflower, potatoes, sautéed onion and garlic, heavy cream, half of the shredded cheese, salt, and pepper. Mix well.
- Step 5: Transfer the mixture to a greased baking dish. Sprinkle the remaining cheese on top.
- Step 6: Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Step 7: Remove from the oven and let cool slightly before serving. Garnish with fresh herbs if desired.
Notes
To store leftovers, let the casserole cool completely, then cover it tightly or transfer it to an airtight container. It will keep in the refrigerator for up to 3-4 days. You can also freeze it for up to 2 months.
