- Step 1: Preheat your oven to 180°C (350°F).
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
- Step 3: Add the diced chicken to the skillet. Cook until lightly browned, then season with salt and pepper to taste.
- Step 4: In a large baking dish, layer half of the sliced potatoes evenly on the bottom.
- Step 5: Spread the chicken mixture over the potatoes, followed by the remaining potato slices on top.
- Step 6: In a bowl, mix the heavy cream and chicken broth together. Pour this mixture evenly over the layered ingredients in the baking dish.
- Step 7: Sprinkle the grated cheese on top, making sure to cover everything nicely.
- Step 8: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Step 9: After 45 minutes, remove the foil and bake for an additional 15 minutes, or until the top is golden and the potatoes are tender.
- Step 10: Garnish with fresh herbs before serving.
Notes
If you have leftovers, store them in an airtight container in the fridge. They should last for up to three days. Reheat in the oven or microwave.
