Ingredients
  

For the One Pot Broccoli Cheddar Pasta
  • 8 oz pasta your choice, such as penne or rotini
  • 2 cups broccoli florets fresh or frozen
  • 4 cups vegetable broth
  • 1 cup sharp cheddar cheese shredded
  • 1 cup milk
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper

Method
 

  1. Step 1: In a large pot, combine the pasta, broccoli florets, vegetable broth, garlic powder, onion powder, salt, and pepper.
  2. Step 2: Bring the mixture to a boil over medium-high heat. Once it’s boiling, reduce the heat to medium and cook for about 10-12 minutes. Stir occasionally until the pasta is al dente and most of the liquid is absorbed.
  3. Step 3: Remove the pot from heat and stir in the butter and milk until everything is well combined.
  4. Step 4: Gradually add the shredded cheddar cheese, stirring until it’s melted and creamy.
  5. Step 5: Serve immediately, garnished with additional cheese if desired. Enjoy!

Notes

If you have leftovers, place it in an airtight container in the refrigerator. It will last for about 3-4 days. Just reheat it gently on the stove or in the microwave, adding a splash of milk to bring back the creaminess.
