  • 500 g plums Fresh, ripe
  • 250 g all-purpose flour
  • 200 g sugar
  • 150 g unsalted butter softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
For Dusting
  • Powdered sugar

Method
 

  1. Step 1: Preheat the oven to 180°C (350°F). Grease a baking pan (approximately 26 cm or 10 inches in diameter).
  2. Step 2: In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Step 3: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Step 4: In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Step 5: Pour the batter into the prepared baking pan and spread it evenly.
  6. Step 6: Arrange the halved plums on top of the batter, cut side up.
  7. Step 7: Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Step 8: Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Step 9: Dust with powdered sugar before serving, if desired.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Can freeze individual slices for up to 3 months.
